Crock Pot Roast

I finally pulled out my crock pot and I made a roast for the first time ever!!! Super easy too. Thomas of course helped me with the meat part because that's not quite my forte.

I used my 6 qt Crock pot for this recipe



Beef Roast

3-4 lb Beef Roast
4 Medium potatoes (quartered)
2 stalks Celery (sliced)
2 onions (sliced - not diced)
salt
pepper
1/2 cup water
olive oil
garlic (we just have a little container of it in our fridge)
flour


1.  Cover the bottom of skillet with olive oil and some garlic.  Heat till hot. 
2. Cover mean with salt, pepper, and flour (and any other seasoning you want to use)
3. Sear meat in skillet 
4. Place all vegetables in crock pot then add mean last.  Add water and the left over garlic and olive oil out of the pan (If there is some left)
5. Heat on high for 4-6 hours or medium for 10-12 hours

Oatmeal Chocolate Chip Cookies


I finally pulled out my wonderful kitchen aid I got for our wedding and made these yummy cookies.  The recipe is absolutely huge. i think it made 6 dozen cookies. So I'd cut it in half unless you want a lot of cookies.




Oatmeal Chocolate Chip Cookies


1 C butter softened
1 C shortening
1 1/2 C brown sugar
1 1/2 C white sugar
4 eggs
2 t vanilla
1 t water

3 C flour
2 t baking soda
2 t salt
2 t baking powder
1/2 t nutmeg
1/2 t cinnamon

4 C oatmeal (quick cooking or regular)
4 C chocolate chips (milk chocolate or semi sweet, I like the milk)


1. Cream together the butter, shortening, brown sugar, and white sugar. Cream the mixture well, now! I would get to creaming this buttery bliss for about 4 minutes. Then add eggs.
2. Add your vanilla and water and mix just until combined.
3. In a separate bowl combine the dry ingredients (all but the chocolate chips) together with a wooden spoon.
4. Add the dry mixture to the creamed mixture and stir to incorporate. Add your chocolate chips, give them a stir to incorporate and you are good to go.
5. Roll into 1 1/2 inch balls and place on a sprayed cookie sheet.
6. Bake at about 350 degrees for 8 minutes. (For convection ovens bake at 325 for 6 1/2 minutes). Don't over bake my friends! When your cookies have cracks down the middle, take them out and let them finish cooking on the pan for about 3-5 minutes.
